Sautéed Greens

 

Ingredients

1 Stick Butter
1/2 medium brown onion
Large bunch of Rhubarb Swiss Chard
Large bunch of beet greens
1 clove garlic, crushed
Salt & pepper to taste
 
Other Optional Ingredients
-Collard Greens-
- Sliced hot links or smoked Sausages -

  • Float the greens then chop about 2-3 inches in length.

  • Slice the onion and separate the rings.

  • In a large frying pan melt the butter and add the onion and garlic on medium heat.  Cook until caramelization begins.

  • Add the greens on top and cover reducing heat to simmer or low.

  • Simmer 5-10 minutes.


  • Do’s & Don’ts

    Do not over cook or over stir.  Flipping is a much better way to mix the vegetables.  If you don't like greens, like I didn't, you will change your mind after this one!

    Serving Suggestions: 

    Will serve 4-6 servings.  It all depends on how much you put on the plate.  A great veggie with dinner!!
