Salsa Fresca basic
Ingredients;

  • 1 Jalapeņo Chili finely diced
  • 1 Medium Brown onion finely chopped
  • 4 Ripe red tomatoes Finely chopped
  • 2 green onions chopped
  • 1 garlic clove crushed & chopped 
  • 1 squeeze from a fresh lemon
  • 1/4 cup Cilantro leaves
  • 1 pinch crushed oregano
  • 1 pinch crushed cumin
  • Salt and pepper to taste
  • Remove the seeds and the inner vein of the Jalapeņo.  

    Place all the ingredients into a non metallic bowl and mix together.  If the Salsa is too hot, add more tomatoes.  If you like it hotter, add another Jalapeņo.  

    Great to eat with chips or as a salsa with dinner.

    Fresh Salsa's are best made the day before to allow the flavors to mix and compliment each other.

    Salsa Fresca Kicked up a few notches
    Ingredients;

    Same as Salsa Fresca basic and then add...

  • 1 additional Jalapeņo chili
  • 1 additional garlic clove
  • 1 Serrano chili
  • 1 Yellow chili
  •       -Additional optional ingredients-

  • 1/2 cup peeled and diced cucumber
  • 1/2 cup finely sliced cabbage
  • First you will toast over an open flame the chili's until the skin begins to peel.  Remove the skin, seeds and inner vein and chop very finely. If all you have is an electric oven you can stir fry the chili's in a little hot oil.

    Place all the ingredients into a non metallic bowl and mix together.  If the Salsa is too hot, add more tomatoes.  If you like it hotter, add another Jalapeņo.
