Russian Tomato Salad

 

Ingredients

2  Medium/small tomatoes
2 Green onions
3 tblspns. Extra Virgin Olive Oil or Sunflower Oil
A few sprigs of fresh dill or parsley
-1/8 cup finely chopped onion -
Salt to taste
 
Other Optional Ingredients
-1 small pickling cucumber -
-Splash of Balsamic Vinegar-
-1 small red Bell Pepper-

  • Wash Tomatoes and cut in half from top to bottom. With the flat side down, cut across in about 1\8" slices.  Then in half from top to bottom again.

  • Finely chop the green onion.

  • Add all the ingredients to a bowl and let sit a few minutes before serving.

  • OY!!!!!!!!  Very easy!!!!

    The tomatoes were not chopped but sliced.  I also noticed this is how they were prepared in Russian restaurants.  Make sure your tomatoes are fresh and firm, but not green.  Roma tomatoes are very good for this dish.

    If you use the Cucumber, you may want to peel it first.

    Eat while fresh.  After a day or 2 it is not as good.

    Serving Suggestions: 

    Will serve 2-4 servings.  It all depends on how much you put on the plate.  Served as a salad with lunch or dinner or just a refreshing midday snack. 

    Try serving with some sour cream or your favorite Ranch Dressing!
